dual core processors for now split the load of processes between processors. For instance Windows has a networking service and an explorer service. These services can run on either processor which cuts in half the number of processes running on any one processor. There is a little overhead to sort how the processes are queued to be processed.
There is also the capability to allow a single process to use multiple cores which in the case of gaming will allow much better frame rates and capabilities on the programmers side. The down side is that it is very cumbersome to program with multi-processing capabilities. Most programs let the Operating System decide now-a-days.
The speed increase you will see in games now is usually due to the fact that the OS is load-balancing the processors. Eventually the programs themselves will be multi-process capable allowing the games to be much more realistic and fluid.
